I'm sorry to hear about that.
When the phone is restarting, are you using a specific app or service in the phone, and how often would you say the phone restarts, is it a few times per day or once a week?
Based on the troubleshooting you have already done, I would recommend performing a software repair using Xperia Companion, do note that this will delete all data that is stored on the internal storage, so it's recommended to perform a backup using Xperia Companion at first.
When the repair has been completed, do not install any apps or restore the backup just yet, instead try using the phone as normal and see if you are still experience that apps are shutting down and that the phone is restarting. Just to make sure that no data in the backup is the cause of these restarts.
If you have a SD card in your phone I would recommend removing that as well.

My Sony Xperia T3, crashes too often.... I've been fixing it using PC Companion, yes, but the frequencey of it going into boot-looping is now very frustrating. Is this a software issue or is the phone just unstable?
I've had to fix it 4times in two months. Please help.

If you experience this behaviour that frequently I'd recommend that you get in touch with your Local support team so they can arrange a repair for you since the device will need to be examined at an authorized service centre.
I have the same problem. I have the feeling its related to unwanted inputs from the touchscreen or the battery.
Phone will restart in the middle of any app. Then goes for hours without being able to restart or charge. Then if you're lucky the plugging charger in allows the phone to reset itself and then allow to turn on.
Very frustrating that i live in spain and they will probably say the phone is out of warranty. Not very impressed with Sony customer support. NONEXISTENT .
This is some kind of hardware / software issue. I haven't had this problem before, I have this phone since 2016.

It does sound like it's related to hardware and not software as you are not able to power on / charge the device after it has been turned off while using an application.
Just to make sure that it's not caused by the software in the device, I recommend that you perform a software repair using Xperia Companion. This action will delete all data stored on the internal storage of the device and reinstall the latest available software. Since data is being deleted, it is important that you create a backup using Xperia Companion before you start with the repair.
Should there be no change after the software repair has been completed, your device will need to be examined by a technician at an authorized service centre and your Local support team will assist you further.
If you have any questions regarding warranty, local service routines and so forth, they will gladly assist you with this as well and are better equipped to give you a more detailed answer than I am since I work globally and these routines differs between markets.
